Ingredients:
- 8 oz spaghetti (or your preferred pasta)
- 1 lb shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp GrandpaKong Roasted Shrimp Salt (or to taste)
- 1/4 tsp red pepper flakes (optional, for heat)
- 1/4 tsp black pepper
- 1/2 cup chicken broth (or white wine for extra flavor)
- 1 tbsp lemon juice
- Fresh parsley for garnish
- Grated Parmesan cheese (optional)
Directions:
- Cook the pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the shrimp to the skillet and season with GrandpaKong Roasted Shrimp Salt, red pepper flakes (if using), and black pepper. Cook for 2-3 minutes on each side until the shrimp are pink and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining olive oil and minced garlic. Cook for 1-2 minutes, being careful not to burn the garlic.
- Pour in the chicken broth (or white wine) and lemon juice, scraping the bottom of the pan to release any browned bits.
- Add the cooked pasta to the skillet, tossing to coat in the garlic and broth mixture. If needed, add the reserved pasta water to help the sauce coat the pasta.
- Return the shrimp to the skillet and toss everything together. Cook for an additional 1-2 minutes to heat through.
- Serve the pasta garnished with fresh parsley and a sprinkle of grated Parmesan cheese, if desired.
