GrandpaKong’s Shrimp Salt Roasted Veggie Medley
Ingredients:
- 1 medium zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup cherry tomatoes
- 1 small red onion, sliced
- 1 cup baby carrots
- 2 tbsp olive oil
- 1 tbsp GrandpaKong Roasted Shrimp Salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp dried Italian seasoning (optional)
- Fresh parsley for garnish (optional)
Directions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a large mixing bowl, toss the veggies with olive oil until they’re well-coated.
