Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs for more flavor)
  • 1 cup uncooked white rice (or brown rice)
  • 2 1/2 cups chicken broth (or water)
  • 1 tbsp GrandpaKong Herb Mix
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese (optional, for topping)
  • Fresh parsley for garnish (optional)

Directions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In the bottom of the baking dish, spread the uncooked rice evenly.
  3. Pour the chicken broth over the rice, ensuring it’s well-distributed.
  4. Season both sides of the chicken breasts with GrandpaKong Shrimp Salt, garlic powder, onion powder, black pepper, and paprika.
  5. Place the seasoned chicken breasts on top of the rice. Drizzle with olive oil.
  6. Cover the baking dish with foil and bake for 35-40 minutes, or until the chicken is cooked through and the rice is tender.
  7. Remove the foil, sprinkle with mozzarella cheese (if using), and bake uncovered for another 5-10 minutes until the cheese is melted and bubbly.
