Ingredients:
- 1 medium zucchini, sliced
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 small red onion, cut into wedges
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp GrandpaKong Roasted Shrimp Salt (or to taste)
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes (optional for extra heat)
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Fresh cilantro or parsley for garnish (optional)
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss the zucchini, bell peppers, red onion, and cherry tomatoes with olive oil until evenly coated.
